December often brings many opportunities to
gather with friends and family, however, that excitement also brings with it the question…. WHAT in the world will we eat?
To help answer that question, I am posting my
grandma Pee Wee’s famous pistachio pudding cake recipe. My grandmother was a baker in
the Navy during World War 2, her love of everything sweet, and savory was passed
down to her children and grandchildren. I remember crawling up on her red and
white patent leather chairs, peering over the edge of the table in hopes that she
might let me lick the spoon or better yet, the beater from the mixer!! The
smell of baked goodness would fill the house, I can almost taste it now. She
passed away many years ago, but her handwritten recipe cards are cherished among
the family. It is my hope that you will enjoy this yummy treat with your loved
ones as you celebrate friends and family!

Pee Wee’s Pistachio Pudding
1 cup flour
1 stick margarine or butter
2 TBS. sugar
½ cup chopped nuts
Mix and pour into 9X13 pan (she always used
glass) Bake 15 minutes on 350 and then cool.
1 8 oz. softened cream cheese
2/3 cup powdered sugar
½ large Cool Whip container
Beat together and spread as 2nd layer
2 packages instant pistachio pudding
Blend with 3 cups of milk.
Spread on as 3rd layer
½ carton Cool Whip spread on as 4th
layer
Sprinkle with chopped nuts and cherries and
refrigerate for 7 hours.
