Quick and easy healthy meals??
I haven't been much in the mood for cooking the past month or so and I've been doing kind of quick and easy meals, which aren't always the healthiest or most nutritional I just have not had the motivation to "prepare meals". So this weekend I decided to make some things ahead of time.
... Yesterday I made a large pot of Turkey Chili and a large batch of Turkey Taco meat. I packed up about 2 thirds of each and put them into the freezer. Today I'm making a big pot of refried beans, most of which will also go into the freezer. Plus I have 3lbs of apples in my slow cooker, which I hope to turn into unsweetened chunky applesauce. And lastly, I have about 2 lbs of ground turkey left that I'll use to make Turkey Zucchini Burgers and Meatballs.
I should be set for awhile with healthy quick and easy meals.

What do you prepare ahead of time for those days when you just don't feel like cooking, but want to eat a healthy and nutritious meal?
