For St. Patrick’s Day here is a little food fun – Two “GREEN” Recipes for you to try. The first one is delicious and we call it, Green Grilled Cheese! This is actually one of my daughter’s favorite fast meals, and I thought I would share it with you.
Green Grilled Cheese
For one sandwich, put 1Tablespoon of butter in a skillet and melt it. While the butter is melting and getting a little browned, I usually take three or four medium size Brussels Sprouts and I slice them very thinly. Sautee the sliced Brussels Sprouts in the butter until they are softened and then remove them from the skillet. We love Gouda cheese for grilled cheese sandwiches, but you can use whatever cheese you prefer. Put a little more butter in the pan, if needed, and then put your bread, cheese, sauteed Brussels Sprouts, another piece of cheese, and the top slice of bread. Grill it up as you normally would, but you may be surprised at how delicious the Brussels Sprouts are in that sandwich. It is fantastic and is aan easy way to get a little more green into your diet. We don’t have to worry about the butter right now… one step at a time! 😊
The second recipe is called, “Spinach and Artichoke Pasta”.
Ingredients
- 8 ounces or so of whole wheat pasta (could be macaroni, rotini, or whatever you have)
- 1 package of baby spinach, chopped
- ½ block of reduced-fat cream cheese
- ¾ c. milk (reduced-fat if possible)
- ½ c grated Parmesan cheese
- 2 teaspoons of garlic powder
- 1 jar of artichoke hearts, rinsed, dried, and chopped
- Pepper to taste
While your pasta is cooking, wilt your spinach in a pan with just a spoonful of water over medium heat. It only takes a few minutes. Transfer to a bowl. In that same pan, add cream cheese and milk. Stir until the cheese is melted. Then add parmesan cheese, garlic powder, and pepper, cook until it becomes thick and bubbly and then add the artichokes.
Drain the excess water from your spinach, drain your pasta, and add them to your sauce bowl. Stir until everything is coated in the sauce.
Serve while it is warm. It makes about 4 servings.
